Friday Night Salted Chocolate Chip Cookies


It’s Friday, and we had no plans tonight except our usual Friday night of watching movies and baking.  It’s my favorite thing to do, stay home and bake (as you know).   So we built a Gingerbread man house, watched Charlie Browns Thanksgiving special (thanksgiving is less than a week away). Since I’m going to be baking nothing but pies from here on out, I wanted to just bake us some night time comfort cookies.  You know what I’m talkin about people.



Tonight’s Recipe:
SALTED CARAMEL CHOCOLATE CHIP COOKIES

INGREDIENTS-
2 1/2 cups Flour
1/2 cup Granulated Sugar
1 cup Dark Brown Sugar
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 cup softened butter
1 teaspoon vanilla
1/2 cup Caramel
1 cup chocolate chips
Sea Salt

DIRECTIONS:
Preheat oven to 350 degrees
1) Combine the flour, baking soda, salt in one bowl
2) In a separate bowl- add sugars, add warm butter, vanilla & mix.  Then add eggs and mix well.
3) Add the wet mix to your dry mix.  Mix well.
4) Add Caramel (see below for fresh caramel recipe)
5) Add chocolate chips
6) line your baking sheet with parchment paper.
7) Plop your dough in tablespoon sized drops.  
8) Bake 8-10 min
9) Sprinkle with Sea Salt while still hot and fresh out of the oven.
10) Enjoy with a cold glass of milk.

*Caramel sauce recipe:
1 packed cup brown sugar
1/2 cup half and half
4 tablespoons butter
Pinch of salt
1 Tablespoon vanilla extract
Mix the brown sugar, 1/2 & 1/2 , butter, and salt in a saucepan over medium low heat.  Cook while whisking gently for 5-7 min, until it gets thicker.  Add the vanilla and cook another minute to thicken further.  Turn off the heat and cool slightly and pour the sauce into the jar, refrigerate until chilled., about 1 hour.  I already had some chilled in the fridge so I used my stash.  :)











And I did make a delicious cup of Hot Toddy Tea
