Julia Child’s White Sandwich Bread- FOR THANKSGIVING LEFTOVER SANDWICHES

Happy Post Thanksgiving Everyone!!

I don’t know about you, but I ate SO MUCH amazing food.  My friends Brooke and Derrick hosted this year at their lovely home.  It was lots of fun, the turkey was SO DELICIOUS, we had all the classics... Mash Potatoes, Green Bean Casserole, Stuffing, Sweet Potato Pecan Casserole, Cranberry, and fresh rolls.
My contribution of course, were 3 pies- Cranberry Pie (which was such a hit, I think you can do this for Xmas this year guys, so I’ll post the recipe again soon), Bourbon Pecan Pie, Apple Streusel Pecan Pie.

We had lots of leftovers, and Brooke sent me home with a compilation melody of everything.  So that is what inspired me to bake some fresh bread.  That and exactly what this original recipe’s author said... she didn’t feel like leaving her house.  Pea and I were in our jammies for the past 24 hours.  We  bathed and got into fresh jammies again, we’re not that lazy...We just didn’t want to battle the crowds or people with Black Friday.

Here is the link to the original recipe and founder of this recipe.  I followed it to the T.  It turns out PERFECT EVERY TIME, and makes 2 fresh loaves for the week.

INGREDIENTS:
  • 6- 6 1/2 Cups of Bread Flour (I love King Arthur Bread Flour)
  • 2 1/2 Cups Warm Water (this should be Luke warm to the touch)
  • 1 Tablespoon Active Dry Yeast
  • 1 Tablespoon Sugar
  • 2 tsp Salt
  • 1/4 cup Butter (warmed just enough to be softened, not too hot or your yeast will not rise).

DIRECTIONS:

1) Pour 1/2 Cup of water into a bowl (I use my kitchen aid mixer with the bread kneader attachment).  Make sure you can stick your finger in the water without it feeling too hot or too cold.  Should be just right, or your yeast will not rise if it’s too hot...I’ve made that mistake :(
2) Stir in your Yeast and Sugar into the warm water bowl.  Mix, and after 5 min, if your mixture isn’t bubbly, toss and start over. 
3) Add the rest of your warm water to the bowl.  Stir until well blended.
4) Add about half of the flour (about 3 cups), salt and butter.  Stir with your dough hook.  You can also do this by hand or with a spoon, but dough will be super sticky.  Pour the rest of the flour in slowly while this is stirring.
5) Continue to knead, or let the dough hook run on low for about 8 min.
6) Turn the dough over onto a well floured countertop and kneed a few times, should feel sticky but not stick to your hands.  Add a bit more flour as needed but not too much flour.  
7) Shape into a ball and put it back in the bowl.  Cover with a clean kitchen towel and let it rise for 1 1/2 Hour.  It should double in size at least.
8) After your drought has risen, roll it out again on the countertop.  Punch it out.  
9) Roll it out to a rectangle shape.  Cut it into two even pieces.
10) Then fold each one in half, like folding paper.  And lay them in your buttered up 4x8 inch loaf pans.
11) Cover up again for another hour and let them rise until double the size.  
12) Preheat your oven to 375.  Once your loaves have doubled in size, I like to brush some room temp butter on top of the bread and then stick them in the MIDDLE of the rack.
13) Bake for 30-35 min.  Until Honey light brown.  Pull them out and let them cool down for 20 min. 

* This bread is so amazing with warm butter, honey, jam.  
But I’ll tell you what...  

You’ll never buy bread again.
